Ok so here is my list of new parts in boxes:
Clutch kit (disk, plate, release bearing and spring)
Transmission
brakes (disks and pads)
shift linkage
Motor mounts (dogbone and lower)
clutch master cylinder

what's the easy/hard rating for each to replace?

Danny just drop the engine! Everthing will go in a lot easier on the hoist, the workbench or the empty engine compartment.

Well, the clutch, transmission, motor mounts and slave cylinder (and if you are doing the master you should do the slave) would all be done at the same time. That is: changing the clutch requires pulling the transmission, which requires pulling the mounts and slave cylinder.

Pulling the transmission is a fairly involved job and requires time, effort and equipment. (jacks, jack stands, a reasonable selection of quality hand tools, a service manual, etc...).

The clutch master cylinder is difficult only because of its location and access. Its under the dash and above the steering column. So pull the column and then the entire pedal assembly. Its a PITA because you are working on your back in a very confined space with limited access. You should get a proper flare nut wrench for the hydraulic lines.

... to make pulling and installing the trans easier. The MORTERO HOIST and the HOELSCHER STUD are just two MUST HAVES that make it a ONE MAN JOB... and FUN for two or more...
