Couple of additional thoughts:
The brake (and clutch) master cylinder (and clutch slave cylinder) may very likely need replacement as well as doing the calipers and hoses. All are prone to rotting when sitting.
For Weber info contact Steve C.. He has a repair facility in your country (no idea where he is relative to you however) that specializes in Fiats (called "The Fiat Factory") and he is a Weber guru. He is very active on this forum (user name "fiatfactory"), so give him a shout...he's a great guy and knows his stuff!
