There should be no gasket between the idler plate and the block. It is normal to have water seep out when you loosen the idler locking nut. First, there is often condensation trapped under the idler that escapes. Second, the stud that retains the idler is threaded into the water passage of the block. When the nut is loosened it will allow a small amount of coolant to escape.
